- 2 cups plain Greek yogurt
- 1 cup fresh or frozen blueberries
- 2 to 3 tablespoons honey or maple syrup
- 1 teaspoon lemon zest (optional)
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds (optional)
- Pinch of sea salt
Instructions
- Make the blueberry swirl: In a small saucepan over medium heat, combine blueberries, 1 tablespoon honey or maple syrup, and lemon zest. Stir and let simmer until the berries burst and the mixture thickens slightly, about 6 to 8 minutes. Remove from heat and let cool slightly.
- Prepare the yogurt base: In a bowl, whisk the Greek yogurt with the remaining honey (or maple syrup), vanilla extract, and a pinch of sea salt until smooth. If using chia seeds, stir them in now.
- Assemble the bites: Line a small muffin tin or silicone mold with paper liners. Spoon a teaspoon of yogurt into each well. Add a small dollop of the blueberry mixture on top. Using a toothpick, swirl the blueberry into the yogurt.
- Freeze: Place the tray in the freezer and freeze for at least 1 hour, or until firm.
- Store and serve: Pop the bites from the mold and transfer them to an airtight container or freezer bag. Keep separated by parchment paper if stacking. Serve straight from the freezer.
Notes
For a dairy-free version, use plant-based yogurt and swap honey for maple syrup. Experiment with different fruits for a variety of flavors.
