- 1 cup chopped onion (fresh or leeks)
- 1 can (10.5 oz) cream of mushroom soup (homemade or cream of chicken soup)
- 1 cup sour cream (or Greek yogurt)
- 1 cup shredded cheddar cheese (or Monterey Jack)
- 1 bag (32 oz) frozen tater tots
- Salt and pepper to taste
- Optional toppings: Chopped green onions or crispy bacon bits
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until cooked through, about 6-8 minutes.
- Add the chopped onion and cook for another 3-4 minutes until softened.
- Stir in the cream of mushroom soup and sour cream, mixing until well combined. Let simmer for 5 minutes.
- Season with salt and pepper to your liking.
- Spread the beef mixture evenly in a greased 9×13 inch baking dish and top with shredded cheese.
- Arrange the frozen tater tots on top.
- Bake for 30 minutes or until tater tots are golden brown and crispy.
- Let cool for a few minutes and garnish with optional toppings before serving.
Notes
You can use ground turkey, black beans, or lentils for a healthier or vegetarian option. This casserole can be prepared in advance and baked when ready to serve.
