A vibrant salad featuring mixed greens, fresh asparagus, radishes, cherry tomatoes, and creamy goat cheese, perfect for celebrating spring.

- 6 cups mixed spring greens (butter lettuce, baby spinach, arugula)
- 1 bunch asparagus, trimmed and blanched or roasted
- 4 radishes, thinly sliced
- 1 cup cherry tomatoes, halved
- 4 ounces goat cheese, crumbled
- 1/2 cup toasted walnuts or pistachios, roughly chopped
- 2 tablespoons honey
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons white wine vinegar or lemon juice
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the asparagus: Trim the woody ends and either blanch in boiling salted water for 2 minutes, then shock in ice water, or toss with a teaspoon of olive oil, salt, and pepper and roast at 425°F for 8–10 minutes until tender and slightly charred.
- Wash and dry the greens thoroughly so the dressing clings and does not make the salad soggy. Tear larger leaves into bite-sized pieces.
- Make the dressing: In a small bowl whisk together the honey, Dijon mustard, vinegar (or lemon juice), and a pinch of salt. Slowly whisk in the olive oil until emulsified.
- Assemble the salad: In a large bowl combine the greens, halved cherry tomatoes, sliced radishes, and warm asparagus. Toss lightly with half the dressing, then plate.
- Crumble goat cheese over the top and sprinkle toasted nuts for crunch. Drizzle remaining dressing as needed and finish with a few turns of fresh black pepper.
- Serve immediately so the goat cheese is creamy and the textures remain vibrant.

For additional flavor, consider adding seasonal fruit, grilled chicken, or edible flowers for presentation.
