Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp smoked paprika
  • 1/2 tsp ginger, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 2 cups beef broth
  • 2 cups assorted vegetables (like carrots, bell peppers, or zucchini)
  • 1 can chickpeas, rinsed and drained
  • Olive oil, for sautéing
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, for garnish

Instructions

  1. In a large pot or traditional tagine, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook until fragrant, about 1 minute.
  2. Increase the heat to medium-high and add the beef cubes. Season with salt and pepper. Brown the beef on all sides, around 5-7 minutes.
  3. Sprinkle in the cumin, cinnamon, smoked paprika, and ginger. Stir to coat the beef with the spices.
  4. Stir in the drained diced tomatoes, followed by the beef broth. Bring to a gentle boil, scraping up any brown bits from the bottom.
  5. Reduce the heat to low, cover, and let it simmer for about 40 minutes.
  6. After 40 minutes, add in the assorted vegetables and chickpeas. Stir gently to combine. Cover again and simmer for another 15-20 minutes until vegetables are tender.
  7. Taste the tagine and adjust seasoning if needed. Garnish with fresh cilantro or parsley before serving.

Notes

Allow the tagine to rest off the heat for about 10 minutes before serving. A squeeze of fresh lemon juice before serving brightens up the flavors.
