- 1 pound beef sirloin or tenderloin
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup sour cream
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Slice the beef into thin strips against the grain.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat; brown the beef for 3-4 minutes, then set aside.
- In the same pan, lower the heat, add remaining oil, and cook onion for 3 minutes, then add garlic and mushrooms.
- Sprinkle flour over the mixture, stir, and gradually add beef broth; simmer for 3-5 minutes until thickened.
- Reduce heat, stir in sour cream, and mix in the beef.
- Season with salt and pepper, garnish with parsley, and serve immediately.
Notes
For a healthier option, use Greek yogurt instead of sour cream and lean cuts of beef. Consider adding peas or spinach for extra nutrition.
