Ingredients

  • 1 pound beef sirloin or tenderloin
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Slice the beef into thin strips against the grain.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat; brown the beef for 3-4 minutes, then set aside.
  3. In the same pan, lower the heat, add remaining oil, and cook onion for 3 minutes, then add garlic and mushrooms.
  4. Sprinkle flour over the mixture, stir, and gradually add beef broth; simmer for 3-5 minutes until thickened.
  5. Reduce heat, stir in sour cream, and mix in the beef.
  6. Season with salt and pepper, garnish with parsley, and serve immediately.

Notes

For a healthier option, use Greek yogurt instead of sour cream and lean cuts of beef. Consider adding peas or spinach for extra nutrition.
