Ingredients

  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 1 pound broccoli florets, trimmed
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (optional)
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar
  • 1/2 cup beef or chicken broth
  • 2 teaspoons cornstarch mixed with 2 tablespoons cold water
  • Sesame seeds and sliced green onions to garnish (optional)

Instructions

  1. Prepare the beef: Pat the steak dry and slice it thinly against the grain. Toss with a pinch of salt and 1 teaspoon cornstarch.
  2. Mix the sauce: Whisk together soy sauce, oyster sauce, brown sugar, rice vinegar, and broth in a bowl. Set aside.
  3. Blanch the broccoli: Bring a pot of salted water to a boil, add broccoli for 1 minute, then plunge into ice water. Drain and set aside.
  4. Heat the pan: Warm a large skillet or wok over high heat until very hot, then add 1 tablespoon oil.
  5. Sear the beef: Add beef in a single layer. Let it brown for 30–60 seconds before stirring; remove and set aside.
  6. Aromatics: Add the remaining oil to the pan, sauté garlic and ginger for 15–30 seconds until fragrant.
  7. Combine: Return beef to the pan, add blanched broccoli, and pour the sauce over. Stir and let simmer for 1–2 minutes.
  8. Thicken: Stir the cornstarch slurry and add to the pan. Cook until the sauce thickens, about 30–60 seconds.
  9. Finish: Remove from heat, sprinkle with sesame seeds and green onions, and serve over steamed rice or noodles.

Notes

For a healthier option, use brown rice or cauliflower rice. Adjust flavors by marinating beef or adding bell peppers.
