- 3 ripe bananas
- 1/3 cup melted butter
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 ½ cups all-purpose flour
- Optional add-ins: chopped nuts, chocolate chips, or dried fruit
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the bananas in a large mixing bowl until smooth, leaving some small chunks for texture.
- Stir in the melted butter until combined, then add sugar, egg, and vanilla. Mix until smooth.
- Sprinkle the baking soda and salt over the mixture, then add the flour. Fold gently until just combined; do not overmix.
- If using, gently fold in nuts or chocolate.
- Pour the mixture into a greased loaf pan and smooth the top lightly.
- Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a healthy option, substitute Greek yogurt for half the butter. To make it vegan, replace the egg with flaxseed meal and use coconut oil instead of butter.
