- 4 large onions (yellow or sweet)
- 4 tablespoons olive oil (or melted butter)
- Salt and pepper (to taste)
- 1 cup grated cheese (cheddar or Gruyère)
- Fresh herbs (thyme or rosemary)
- Optional: Balsamic vinegar or soy sauce
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the outer layers off the onions and cut the tops off, scooping out some of the center.
- Drizzle olive oil inside and outside the onions, and sprinkle with salt and pepper.
- Stuff each onion with grated cheese.
- Place the onions in a baking dish and cover with foil. Bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
- Sprinkle with fresh herbs before serving.
Notes
For variations, add cooked bacon or mix in seasonal ingredients. You can also swap cheese for a vegan option.
