Ingredients

  • 4 large onions (yellow or sweet)
  • 4 tablespoons olive oil (or melted butter)
  • Salt and pepper (to taste)
  • 1 cup grated cheese (cheddar or Gruyère)
  • Fresh herbs (thyme or rosemary)
  • Optional: Balsamic vinegar or soy sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the outer layers off the onions and cut the tops off, scooping out some of the center.
  3. Drizzle olive oil inside and outside the onions, and sprinkle with salt and pepper.
  4. Stuff each onion with grated cheese.
  5. Place the onions in a baking dish and cover with foil. Bake for 30 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
  7. Sprinkle with fresh herbs before serving.

Notes

For variations, add cooked bacon or mix in seasonal ingredients. You can also swap cheese for a vegan option.
