Ingredients

  • 300g pasta (penne or fusilli)
  • 2 cups cherry tomatoes
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe dish, combine the cherry tomatoes, minced garlic, olive oil, salt, and pepper. Stir well.
  3. Nestle the block of feta cheese in the center of the tomatoes and drizzle with extra olive oil, salt, and pepper.
  4. Bake for about 20 minutes until the feta is creamy and the tomatoes are bursting.
  5. While baking, cook the pasta in salted water according to package directions until al dente; reserve about a cup of pasta water before draining.
  6. Once baked, mash the feta and tomatoes together to create a sauce, then gradually mix in the cooked pasta and reserved water to achieve desired creaminess.
  7. Toss in fresh herbs and adjust seasoning as needed.
  8. Serve garnished with additional herbs and red pepper flakes if desired.
