- 300g pasta (penne or fusilli)
- 2 cups cherry tomatoes
- 4 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
- Red pepper flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe dish, combine the cherry tomatoes, minced garlic, olive oil, salt, and pepper. Stir well.
- Nestle the block of feta cheese in the center of the tomatoes and drizzle with extra olive oil, salt, and pepper.
- Bake for about 20 minutes until the feta is creamy and the tomatoes are bursting.
- While baking, cook the pasta in salted water according to package directions until al dente; reserve about a cup of pasta water before draining.
- Once baked, mash the feta and tomatoes together to create a sauce, then gradually mix in the cooked pasta and reserved water to achieve desired creaminess.
- Toss in fresh herbs and adjust seasoning as needed.
- Serve garnished with additional herbs and red pepper flakes if desired.
