- 1 block Feta Cheese
- 4 large Eggs
- 1 cup Cherry Tomatoes, halved
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- Fresh Herbs (Basil or Parsley)
- Salt and Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Drizzle a tablespoon of olive oil in a medium-sized oven-safe dish.
- Place the block of feta in the center, surrounding it with halved cherry tomatoes, and scatter minced garlic on top.
- Drizzle with more olive oil, then sprinkle with salt, pepper, and fresh herbs.
- Bake for 20 minutes until the feta is slightly browned and tomatoes start to burst.
- Create small wells in the feta-tomato mixture and crack an egg into each well.
- Return the dish to the oven and bake for an additional 10-12 minutes.
- Garnish with fresh herbs, a drizzle of olive oil, and red pepper flakes if desired.
Notes
Let the dish sit for a few minutes before serving. Fresh herbs can be added just before serving for maximum flavor.
