Ingredients

  • 2 pounds baby potatoes
  • 6 slices crispy bacon
  • 1 cup ranch dressing
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and chop your potatoes into halves or quarters. Place in a large pot, cover with cold water, and add a pinch of salt.
  3. Boil potatoes for 10-12 minutes until fork-tender but not mushy. Drain and cool slightly.
  4. Cook bacon in a skillet over medium heat until crispy, then drain on paper towels and crumble.
  5. In a mixing bowl, combine ranch dressing, sour cream, garlic powder, and salt and pepper. Mix well.
  6. Gently fold in cooked potatoes and crumbled bacon, then add half of the shredded cheese and mix well.
  7. Transfer the mixture to a greased 9×13 inch baking dish and top with remaining cheese.
  8. Bake for 30-35 minutes until cheese is bubbly and golden brown.
  9. Let cool for 5-10 minutes before serving.
