- 2 pounds baby potatoes
- 6 slices crispy bacon
- 1 cup ranch dressing
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and chop your potatoes into halves or quarters. Place in a large pot, cover with cold water, and add a pinch of salt.
- Boil potatoes for 10-12 minutes until fork-tender but not mushy. Drain and cool slightly.
- Cook bacon in a skillet over medium heat until crispy, then drain on paper towels and crumble.
- In a mixing bowl, combine ranch dressing, sour cream, garlic powder, and salt and pepper. Mix well.
- Gently fold in cooked potatoes and crumbled bacon, then add half of the shredded cheese and mix well.
- Transfer the mixture to a greased 9×13 inch baking dish and top with remaining cheese.
- Bake for 30-35 minutes until cheese is bubbly and golden brown.
- Let cool for 5-10 minutes before serving.
