- 2 cups apple cider
- 1 onion (preferably sweet like Vidalia)
- 4 cloves garlic
- 2 teaspoons fresh thyme
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
Instructions
- Preheat your oven to 325°F (165°C).
- Season the pork shoulder generously with salt and pepper and sear it in olive oil over medium-high heat until browned on all sides, about 8-10 minutes.
- Remove the pork and set aside. Sauté chopped onion in the same pot until soft, about 5 minutes, then add minced garlic and sauté for another minute.
- Deglaze the pot with apple cider, scraping up any brown bits. Add fresh thyme and apple cider vinegar.
- Return the pork to the pot, ensuring it is submerged in the liquid. Cover and braise in the oven for 3-4 hours until tender.
- Remove pork, let it rest for 15 minutes, then shred and mix with sauce before serving.
Notes
Let the meat rest before shredding to keep the juices locked in. For a lighter version, use leaner cuts like pork loin.
